How to make a healthy Veggie Burger

(This recipe makes 4 large burgers)
 
You will need:
A food processor
Approx. 400g chickpeas (1x small tin)
Approx. 600g broad beans (2x small tin)
A handful of chopped onions
4 heaped tablespoons of wholemeal flour
(you may need to add some more if the mixture is too wet)
A couple of splashes of olive oil
1 teaspoon of chilli powder 
1 teaspoon of cumin powder
(Optional – 1x egg white to bind it together)

What to do:
  1. Start by shallow frying the onions in a little olive oil. (Use a large frying pan).
  2. Let the onions cool and add the broad beans and chick peas to the food processor.
  3. Then add 4 tablespoons of flour and the onions to the food processor and start mixing.
  4. Then add one teaspoon of chilli powder and 1 teaspoon of cumin powder and mix.
    *(Optional) If you want you can add the egg white into the mix at this point*
  5. (If the mixture is wet, add more flour until it becomes more solid.)
  6. Once it is all mixed together and you have a moist dough, dust a clean surface with flour and empty the mixture onto it.
  7. Separate the mixture into 4 equal balls and shape your burgers.
  8. Heat a couple of splashes of olive oil in a large frying pan and place the burgers into it.
  9. Turn regularly and add more oil if the pan dries up.

 

Fry the burgers for 6-8 min and they are ready to eat. If you don’t want them straight away, let them cool and put them in freezer bags and place them in the freezer. When you want to eat them place them in a pre-heated oven at gas mark 5 for 10mins (make sure they are hot) and serve.
